Lettuce, Pea & Mint Soup

A truly divine chilled soup for a hot summer’s day.

Serves 6


1 large onion

1 clove garlic

50g butter

350g potatoes (peeled weight) cubed

2 Little Gem luttuces

900ml light chicken or vegetable stock

125g frozen peas

A small bunch of mint

150ml single cream

In a large saucepan, gently fry the onion and garlic in butter until they are soft and translucent. Add the potatoes and stock. Bring to the boil and simmer for about 20 minutes until the potatoes are soft. Add the lettuce, peas and mint. Bring to the boil again and simmer for a further five minutes. Purée the soup and add the cream and some seasoning. If the consistency is too thick, add a little more water. Chill before serving.
